<\/span>Maybe it starts with not making the time to fit in exercise.<span>&nbsp; <\/span>Maybe it starts with that first delicious bite of pumpkin pie and carries you through the final toast on New Year&#8217;s Eve.<span>&nbsp; <\/span>Whatever the impetus down the path of the typical Holiday Horror, there are ways to make that path a little less steep.<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">It&#8217;s no wonder we begin our year with resolutions, right?<span>&nbsp; <\/span>After<br \/>\n4-5 weeks of being out of our healthy routine, the New Year is the<br \/>\nperfect time to throw down the gauntlet and get back to being serious<br \/>\nabout our health.<span>&nbsp; <\/span>I&#8217;m a strong believer in celebrating<br \/>\nwith family and friends throughout the Season, so I follow a few rules<br \/>\nto keep myself on track.<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><font size=\"3\"><u><span>Rule #1:<span>&nbsp; <\/span>You must exercise at least three times per week<\/span><\/u><span>.<span>&nbsp; <\/span>If you&#8217;re busy at night with gatherings and events, then dedicate your early mornings.<span>&nbsp; <\/span>Even if it&#8217;s just a brisk 45 minute walk &#8211; you&#8217;ve gotta make the time.<span>&nbsp; <\/span>Not only is it burning those extra calories, but it&#8217;s keeping your mood up and helping to manage your stress.<\/span><\/font><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><font size=\"3\"><u><span>Rule #2:<span>&nbsp; <\/span>You must be sure to eat at least 5 servings of vegetables throughout your day.<\/span><\/u><span><span>&nbsp; <\/span>This can be a big chopped salad for lunch, raw veggies with hummus as an afternoon snacks, a small spinach salad with dinner.<\/span><\/font><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><font size=\"3\"><u><span>Rule #3:<span>&nbsp; <\/span>When invited to a party, ALWAYS have a small, healthy snack beforehand.<\/span><\/u><span><span>&nbsp; <\/span><span>&nbsp;<\/span>This rule only applies only when you listen to your body&#8217;s hunger\/satiety signals.<span>&nbsp; <\/span>If<br \/>\nyou tend to over eat in social situations, you should consider skipping<br \/>\nthis rule to prevent yourself from just adding on more calories.<\/span><\/font><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><font size=\"3\"><u><span>Rule #4: When invited to a party, ALWAYS bring something healthy you can eat.<\/span><\/u><span><span>&nbsp; <\/span>I hear countless times, &#8220;There was nothing healthy to eat at the party&#8221;.<span>&nbsp; <\/span>Bring<br \/>\na healthy dish to share accomplishes three goals, (1) it will ensure<br \/>\nthat you have something healthy to eat, (2) it will allow you to share a<br \/>\nhealthy choice with others, since other guests are likely looking for<br \/>\nhealthier foods and (3) it will take a little pressure off your hostess<br \/>\nand make Miss Manners proud.<\/span><\/font><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">With a little diligence and commitment, we can all make it safely through the Holidays! <span>&nbsp;<\/span>That will leave room for us to attack the serious resolutions in the New Year!<span>&nbsp; <\/span><\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">In<br \/>\nthe Holiday spirit of sharing, here&#8217;s one of our favorite dip recipes<br \/>\nthat we make at our Healthy Gourmand Nutritionally-Minded Cooking<br \/>\nClasses.<span>&nbsp; <\/span>It&#8217;s a Zucchini-Eggplant Caviar that goes great with dipping vegetables or crackers.<span>&nbsp; <\/span>Enjoy!<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><b><span><font size=\"3\">Zucchini-Eggplant Caviar<\/font><\/span><\/b><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;text-indent: 0.25in\"><span><font size=\"3\">2 lbs eggplant, halved<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;text-indent: 0.25in\"><span><font size=\"3\">2 lbs zucchini, diced<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;text-indent: 0.25in\"><span><font size=\"3\">3 shallots, minced<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;text-indent: 0.25in\"><span><font size=\"3\">6 cloves garlic, minced<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;text-indent: 0.25in\"><span><font size=\"3\">1 lb tomatoes, diced<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;text-indent: 0.25in\"><span><font size=\"3\">2 tablespoons lemon juice<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt 0.5in\"><span><span><font size=\"3\">1.<\/font><span style=\"font: 7pt 'Times New Roman'\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span><font size=\"3\">Cut eggplant in half lengthwise.<span>&nbsp; <\/span>Brush with olive and roast skin side down for 30 minutes at 375 degrees.<span>&nbsp; <\/span>Scoop flesh out and set aside.<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt 0.5in\"><span><span><font size=\"3\">2.<\/font><span style=\"font: 7pt 'Times New Roman'\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span><font size=\"3\">Add one tablespoon olive oil to a saut\u00e9 pan.<span>&nbsp; <\/span>Add shallots and saut\u00e9 for 2-3 minutes.<span>&nbsp; <\/span>Add in diced zucchini and saut\u00e9 for another 2-3 minutes.<span>&nbsp; <\/span>Add in garlic and saut\u00e9 for 2-3 minutes.<span>&nbsp; <\/span>Remove from heat and set aside.<\/font><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt\"><span><font size=\"3\">&nbsp;<\/font><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt 0.5in\"><span><span><font size=\"3\">3.<\/font><span style=\"font: 7pt 'Times New Roman'\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span><font size=\"3\">Add eggplant into food processor, process for 10 seconds.<span>&nbsp; <\/span>Add in zucchini mixture and process another 10 seconds.<span>&nbsp; <\/span>Do not over process &#8211; mixture should have some texture.<span>&nbsp; <\/span>Add in tomatoes, lemon juice and salt\/pepper to taste.<span>&nbsp; <\/span>Serve and enjoy warm or at room temperature.<span>&nbsp; <\/span><br \/><\/font><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt 0.5in\"><span><font size=\"3\"><br \/><\/font><\/span><\/p>\n<p style=\"margin: 0in 0in 0pt 0.5in\"><span><font size=\"3\">Being in control of your choices and, more importantly, making healthy ones is the best gift you can give yourself and your loved ones this holiday season.&nbsp;
