Vanilla\u00c2\u00bc Cup Raisins\u00c2\u00bd Cup shredded Coconut1 \u00c2\u00bc Cup Fresh Cranberries &#8211; previously frozen &#8211; NOT THAWED1 \u00c2\u00bc Cup Walnuts or PecansGrease a muffin pan or line with paper muffin cups . Heat oven to 350 degrees. In large bowl combine first three dry ingred. (flour, soda, cinnamon) Set aside.In 2nd bowl cream butter and sugar. Beat in eggs, applesauce, and vanilla. Stir into dry ingredients until well blended. Gently fold in nuts, coconut and raisins. Last &#8211; fold in frozen cranberries. (freeze a bag of loose fresh cranberries and do not sweeten or thaw).Fill muffin cups \u00c2\u00be full. Bake at 350 degrees for approx. 20-25 minutes or until muffins test done with toothpick in center. Cool just 10 mins in pan then remove to wire rack.Makes about 3 dozen muffins.
