{"id":552,"date":"2009-06-24T10:25:38","date_gmt":"2009-06-24T10:25:38","guid":{"rendered":"http:\/\/blog.beliefnet.com\/freshliving\/2009\/06\/log-cabin-syrup-no-more-high-fructose-corn-syrup.html"},"modified":"2009-06-24T10:25:38","modified_gmt":"2009-06-24T10:25:38","slug":"log-cabin-syrup-no-more-high-fructose-corn-syrup","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/freshliving\/2009\/06\/log-cabin-syrup-no-more-high-fructose-corn-syrup.html","title":{"rendered":"Log Cabin Syrup: No More High-Fructose Corn Syrup"},"content":{"rendered":"<p><span class=\"mt-enclosure mt-enclosure-image\"><a href=\"http:\/\/blog.beliefnet.com\/freshliving\/log-cabin-bottle.jpg\"><img decoding=\"async\" alt=\"log-cabin-bottle.jpg\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/84\/import\/assets_c\/2009\/06\/log-cabin-bottle-thumb-155x333-5967.jpg\" class=\"mt-image-left\" style=\"margin: 0pt 20px 20px 0pt;float: left\" height=\"333\" width=\"155\" \/><\/a><\/span>Exciting news from the processed food world!&nbsp; <a href=\"http:\/\/www.logcabinsyrups.com\/\">Log Cabin Syrup<\/a>, the breakfast table staple since 1887, has announced it&#8217;s replacing the high-fructose corn syrup in its products with natural, &#8220;real&#8221; sugar. <\/p>\n<p>Log Cabin is not alone&#8211;Pepsi (in its <a href=\"http:\/\/featuresblogs.chicagotribune.com\/features_julieshealthclub\/2009\/02\/natural-food-lovers-are-rejoicing-this-week-as-pepsico-announced-it-will-be-introducing-a-new-line-of-pure-sugar-soft-d.html\">Pepsi Throwback<\/a> product) and <a href=\"http:\/\/cityroom.blogs.nytimes.com\/2009\/02\/19\/reading-the-tea-leaves-snapple-refreshes-itself\/\">Snapple<\/a> have both said goodbye to the HFCS this year.&nbsp; <\/p>\n<p>To review, what&#8217;s so bad about high-fructose corn syrup?&nbsp; On one level, not much&#8211;the Snapple switch apparently only dropped 40 calories from a serving of iced tea.&nbsp; But any <a href=\"http:\/\/www.michaelpollan.com\/index.htm\">Michael Pollan<\/a> reader will tell you that there are other costs to be paid for the cheap sweets that are found in corn-based fructose.<\/p>\n<p>I won&#8217;t re-hash all those arguments here, but I will mention two of the most compelling.&nbsp; First, the use of high-fructose corn syrup in everything from bread to cookies to beverages means that we&#8217;re essentially eating the same product in different forms all day long.&nbsp; That just can&#8217;t translate into a balanced diet.&nbsp; Second, farmers are pressured by government subsidies to only grow corn (and soybean) products, which leads to a &#8220;monoculture&#8221; environment in which soil is manipulated into putting out more corn at the expense of supporting the diverse plant life that can help us be healthier, better-fed, and less likely to face the twin demons of obesity and diabetes.<\/p>\n<p>Enough stumping, though&#8211;back to food.&nbsp; In celebration of its big announcement, Log Cabin posted a recipe that, though I&#8217;ll confess that living in New England I would use local syrup over the national brand, looks pretty darn good:<\/p>\n<p><u><b>Apple Pecan Baked Pancake<\/b><\/u><br \/>(Serves 4)<\/p>\n<p>Ingredients: <br \/>1\/2 c. favorite pancake mix<br \/>2 tbsp. butter &#8212; (melted)<br \/>1 c. Granny Smith apple &#8212; (peeled and sliced)<br \/>1\/3 c. pecans &#8212; (chopped)<br \/>3 c. Log Cabin syrup<br \/>1\/2 tsp. cinnamon &#8212; (ground)<\/p>\n<p>Instructions:<br \/>Heat<br \/>\noven to 350 degrees. Prepare pancake mix according to package<br \/>\ndirections; and set aside. Pour melted butter in 9&#8243; pie plate. Place<br \/>\napple slices in bottom of pie plate; sprinkle cinnamon and pecans and<br \/>\ndrizzle syrup over apples; carefully pour batter on top. Bake at 350<br \/>\ndegrees for 30-35 minutes or until top springs back when touched.<br \/>\nLoosen edges and invert onto serving plate. Cut in wedges and serve<br \/>\nwith warm maple syrup and\/or fresh apple butter.
