{"id":389,"date":"2009-05-04T15:20:56","date_gmt":"2009-05-04T15:20:56","guid":{"rendered":"http:\/\/blog.beliefnet.com\/freshliving\/2009\/05\/cinco-de-mayo-best-guacamole-recipe.html"},"modified":"2009-05-04T15:20:56","modified_gmt":"2009-05-04T15:20:56","slug":"cinco-de-mayo-best-guacamole-recipe","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/freshliving\/2009\/05\/cinco-de-mayo-best-guacamole-recipe.html","title":{"rendered":"Cinco de Mayo: Best Guacamole Recipe"},"content":{"rendered":"<p><span class=\"mt-enclosure mt-enclosure-image\"><a href=\"http:\/\/blog.beliefnet.com\/freshliving\/avocado.jpg\"><img decoding=\"async\" alt=\"avocado.jpg\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/84\/import\/assets_c\/2009\/05\/avocado-thumb-220x142-4774.jpg\" class=\"mt-image-left\" style=\"margin: 0pt 20px 20px 0pt;float: left\" height=\"142\" width=\"220\" \/><\/a><\/span>However we mark Cinco de Mayo (or don&#8217;t), it&#8217;s always fun to contemplate the delicious, heart-healthy dip that is guacamole.&nbsp; My favorite recipe comes from the fabulous <a href=\"http:\/\/www.amazon.com\/Santa-Fe-School-Cooking-Cookbook\/dp\/0879058730\">The Santa Fe School of Cooking Cookbook<\/a>.&nbsp; It&#8217;s the perfect combination of lime-y tang and smooth avocado, fresh cilantro and warm chiles.&nbsp; And ooh, that little zing from tiny diced tomatoes.&nbsp; Mmmmm, guac&#8230;.&nbsp; Enjoy!<\/p>\n<p><u><\/p>\n<p><b>Guacamole<\/b><\/u><br \/>3 ripe avocados, about 6 oz. each<br \/>3\/4 c. finely diced white onion<br \/>3\/4 c. diced red plum tomatoes<br \/>2-3 T finely chopped serrano chiles (jalapeno or other chiles may be substituted)<br \/>1\/2 c. coarsely chopped fresh cilantro<br \/>2 T freshly squeezed lime juice<br \/>2 t coarse salt, to taste<\/p>\n<p>Directions:<br \/>1. Cut each avocado in half and remove the pit. Cut the halves in half and carefully peel off the black skin.<\/p>\n<p>2. Cut the quarters into chunks and place in a medium bowl. Mash the avocado with a fork and stir in the onion, tomatoes, chiles, and cilantro.<\/p>\n<p>3. Season the mixture with lime juice and salt.
