My hope for springtime is not dashed though. I know spring will come. It can’t be stopped. Just like love and life can’t be stopped. So, I pull out a favorite recipe, Ginger Oatmeal Cookies, to warm me up.

Oats are a hardy cereal grain. After being harvested and cleaned, they are hulled without stripping away the bran and germ. They are also rather high in manganese and other nutrients. In the cookie, molasses and spices perk the oats up and release a soothing aroma. Making and baking the cookies was a delicious break in my afternoon. And, I was sure to taste-test a cookie before my husband came home, to make sure they were okay to eat.

They were. So, here is the recipe:

Ginger Oatmeal Cookies

Mix in bowl.

¾ cup butter

1 cup sugar

1 egg

¼ cup molasses

Mix in another bowl.

1 ½ cup flour

2 t. baking soda

½ t. salt

1 t. cinnamon

¾ t. ground cloves

¾ t. ginger

2 cups oats

Add the dry and wet ingredients together and mix.

Bake at 350° for 12-14 minutes. I like them moist so take them out of the oven closer to the 12 minute mark.

Ginger oatmeal cookie, notice the old-fashioned oats throughout the moist cookie

Three thousand miles away, our daughters are walking around outside amongst flowers and blooming trees, while we are bundling up in Carhart® winter clothes before walking outside into the falling snow.
