{"id":857,"date":"2011-03-08T16:05:23","date_gmt":"2011-03-08T16:05:23","guid":{"rendered":"http:\/\/blog.beliefnet.com\/drnorrischumleysatisfiedlife\/2011\/03\/recipe-a-gumbo-feast-for-mardi.html"},"modified":"2011-03-08T16:05:23","modified_gmt":"2011-03-08T16:05:23","slug":"recipe-a-gumbo-feast-for-mardi","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/drnorrischumleysatisfiedlife\/2011\/03\/recipe-a-gumbo-feast-for-mardi.html","title":{"rendered":"Recipe: A Gumbo Feast for Mardi Gras and Lent that Isn&#8217;t Fat Tuesday!"},"content":{"rendered":"<p>Here&#8217;s my recipe for an authentic Seafood Gumbo, without meat, and not fattening.&nbsp; You&#8217;ll swear you&#8217;re in New Orleans for Mardi Gras, but this won&#8217;t make you fat!&nbsp; Have it anytime, and during Lent, too, as it contains no meat.&nbsp; If you want a different gumbo (and there are many varieties) you can add sausages, or chicken, or diced pork.&nbsp; Serve over brown rice, or as a soup.<\/p>\n<p><u><b>Dr. Norris Chumley&#8217;s No-Fat Tuesday Gumbo<\/b><\/u><br \/>Serves 5 people<\/p>\n<p>\u00bc fish bouillon, or stock<br \/>\u00bc cup flour<br \/>1 stalk celery<br \/>1 green pepper, cubed<br \/>1 small or medium onion, diced\/cubed<br \/>2 ripe tomatoes, diced or cubed<br \/>1 small can tomato paste<br \/>2 quarts of fish stock (or seafood stock: crab-lobster-clams, preferably fresh)<br \/>1 pound okra (don&#8217;t be afraid, it wont be sticky)<br \/>2 teaspoons New Orlean&#8217;s Creole Seasonings (a equal mix of onion powder, garlic powder, oregano, thyme, basil, pepper, chili powder, paprika, celery seed and tumeric)<br \/>2 dry bay leaves (don&#8217;t eat them!)<br \/>1 pound cooked, deveined and peeled<br \/>10-12 large oysters, shelled and shucked<br \/>\u00bd pound lump crab meat (fresh, preferably)<\/p>\n<p>In a large skillet (don&#8217;t use a cast iron pan, due to the acid in the tomatoes), pour a splash of fish stock or bouillon, heat it, and sprinkle a small amount of flour into it, stirring rapidly.&nbsp; Integrate the flour into the liquid, little by little &#8211; making a &#8220;roux.&#8221;&nbsp; Add the green peppers, celery, and onion, and gently cook them for a few minutes until they are soft.&nbsp; Add the tomatoes and tomato paste, stir until mixed.&nbsp; Cook 10-15 minutes, until lightly simmering.&nbsp; Be sure not to boil it!<\/p>\n<p>Add the okra and the seafood, simmer 20-25 minutes, very lightly.&nbsp; Be careful to not overcook the seafood, or the okra, or your gumbo won&#8217;t taste very good, and the okra might get slimy.&nbsp; Add the seasonings at the very last second before serving.<\/p>\n<p>I&#8217;d LOVE to know what you do for Gumbo!&nbsp; Please post a comment below.<\/p>\n<p>+ + + + + <\/p>\n<p>&#8220;Mysteries of the Jesus Prayer,&#8221; my movie on ancient and modern spiritual practices is available on selected Comcast and Verizon FiOS Video-On-Demand in the SnagFilms Collection.&nbsp; Also available in the ITunes store (US only).&nbsp; Coming soon to DVD.&nbsp; My companion book, same title, is available for pre-order on Amazon, Barnes and Noble, and IndieBound.com<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Here&#8217;s my recipe for an authentic Seafood Gumbo, without meat, and not fattening.&nbsp; You&#8217;ll swear you&#8217;re in New Orleans for Mardi Gras, but this won&#8217;t make you fat!&nbsp; Have it anytime, and during Lent, too, as it contains no meat.&nbsp; If you want a different gumbo (and there are many varieties) you can add sausages,&hellip;<\/p>\n","protected":false},"author":171,"featured_media":0,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[18,6],"tags":[],"class_list":["post-857","post","type-post","status-publish","format-standard","hentry","category-food","category-recipes"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v23.9 - https:\/\/yoast.com\/wordpress\/plugins\/seo\/ -->\n<title>Recipe: A Gumbo Feast for Mardi Gras and Lent that Isn&#039;t Fat Tuesday! - Dr. Norris J.
