{"id":307,"date":"2009-08-25T01:30:00","date_gmt":"2009-08-25T01:30:00","guid":{"rendered":"http:\/\/blog.beliefnet.com\/drnorrischumleysatisfiedlife\/2009\/08\/recipe-oriental-grilled-chicke.html"},"modified":"2009-08-25T01:30:00","modified_gmt":"2009-08-25T01:30:00","slug":"recipe-oriental-grilled-chicke","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/drnorrischumleysatisfiedlife\/2009\/08\/recipe-oriental-grilled-chicke.html","title":{"rendered":"Recipe: Oriental Grilled Chicken\/Salad"},"content":{"rendered":"<p>This is an easy and very tasty low-fat and healthy dish that will leave you very satisfied.&nbsp; You can grill, bake or boil the chicken.&nbsp; Serves 3-4.&nbsp; Add a half cup of brown or wild rice on the side, if you are so inclined.<\/p>\n<p><u>Marinade and Salad Dressing<\/u>:<\/p>\n<p>1 pound boneless\/skinless chicken (breasts or thighs)<br \/>1 cup fresh citrus fruit juice (orange, tangerine, grapefruit) or \u00bd cup lemon or lime juice<br \/>2 teaspoons sesame oil<br \/>1 tablespoon olive oil<br \/>\u00bc cup wine vinegar (red or white)<br \/>2 cloves crushed garlic<br \/>1 \u00bd tablespoon soy sauce or Tamari sauce (low-salt variety is best)<\/p>\n<p><u>Salad<\/u>:<\/p>\n<p>2 cups diced green or red cabbage<br \/>5 cups mixed salad leaves (mesclun, bibb, Boston &#8211; any that have some color and flavor)<br \/>2 mandarin oranges or 1 regular orange (open and separate into wedges)<br \/>15 cherry tomatoes<\/p>\n<p>Marinate the raw chicken in ONE-HALF the liquid ingredients overnight, or for at least 2 hours. Once marinated, drain and throw-out the marinade mixture. Save the other half for the homemade salad dressing.
