{"id":300,"date":"2011-06-24T10:18:28","date_gmt":"2011-06-24T14:18:28","guid":{"rendered":"http:\/\/blog.beliefnet.com\/beyondgorgeous\/?p=300"},"modified":"2014-03-04T10:48:41","modified_gmt":"2014-03-04T15:48:41","slug":"go-ahead-eat-the-guacamole","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/beyondgorgeous\/2011\/06\/go-ahead-eat-the-guacamole.html","title":{"rendered":"Go Ahead &#8212; Eat the Guacamole!"},"content":{"rendered":"<p>The last in our series of surprise low-glycemic foods is another which you probably avoided in other diets.\u00a0 The avocado has received a bad rap over the years and is listed as an exception in the \u201ceat fruits and vegetables\u201d chapter of many diet books.\u00a0 That\u2019s because avocados do contain fat and are higher in calories than most other vegetables.\u00a0 One fifth of an avocado has 50 calories.\u00a0 However, the fat is one of the \u201cgood fats.\u201d ( We\u2019ll talk more on fats &#8212;\u00a0 the good, the bad, and the ugly, in another post.) Also, the fats and fiber make the avocado low glycemic, even though it is higher in calories.<\/p>\n<p>Avocados are high in some essential nutrients, too. They contain significant amounts of Vitamin K, Vitamin B6, Vitamin C, magnesium, lutein, Vitamin E, potassium,\u00a0 and folate.<\/p>\n<p>Guacamole is the way we most often eat avocados &#8212; at least here in the southwest where we like Tex-Mex and Mexican food.\u00a0 So, for low-glycemic recipe day, we are featuring guacamole.<\/p>\n<p>You might have already noticed, but I\u2019m the kind of cook who picks out recipes with names that include words like \u201csuper easy,\u201d \u201cfoolproof,\u201d and \u201cquick.\u201d I could excuse myself with the fact that I live in a travel trailer with a tiny kitchen that has NO counter space.\u00a0 Also, my refrigerator is non-functioning and had to be pulled out to repair, which means we had to turn off the propane.\u00a0 So now I also have no stove or oven.\u00a0 To be honest, though, I never was much of a cook, and if a recipe could be somehow messed up, I would find a way to do it!<\/p>\n<p>I looked through dozens of guacamole recipes and this is the easiest-looking one I found.<\/p>\n<p style=\"text-align: center;\">Easy Guacamole<\/p>\n<p>\u2022 Avocados (number depends on the amount of guacamole you are making.)<\/p>\n<p>\u2022 About 1\/4 t salt per avocado<\/p>\n<p>\u2022 About 2 T salsa per avocado<\/p>\n<p>\u2022 About 3\/4 t garlic powder per avocado<\/p>\n<p>\u2022 About 1\/2 t lemon or lime juice per avocado<\/p>\n<p>\u2022 Optional: Chopped cilantro, chopped onion<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>1) Cut the avocados in half, remove the pit, and scoop the avocado meat from the skin.<\/p>\n<p>2) Add the salt, juice, salsa, and garlic powder and mash together.<\/p>\n<p>4) Add optional ingredients like chopped cilantro or chopped onion.<\/p>\n<p>One friend says she adds a teaspoon of mayo to give a the guacamole a creamier texture.\u00a0 Another says her secret is to use fresh-pressed garlic.\u00a0 Some of the recipes I looked up recommend a chopped tomato and a chopped onion instead of salsa.\u00a0 Others suggest cumin, chili powder, or chopped hot peppers.\u00a0 I plan to start with the easy version and experiment to find out what tastes best.<\/p>\n<p>Does anyone have a favorite recipe to share?\u00a0 Please post in the comment section.
