{"id":1779,"date":"2013-03-22T03:46:13","date_gmt":"2013-03-22T07:46:13","guid":{"rendered":"http:\/\/blog.beliefnet.com\/beyondgorgeous\/?p=1779"},"modified":"2012-12-14T06:36:17","modified_gmt":"2012-12-14T11:36:17","slug":"recipe-day-avocado-chicken-salad","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/beyondgorgeous\/2013\/03\/recipe-day-avocado-chicken-salad.html","title":{"rendered":"Recipe Day &#8212; Avocado Chicken Salad"},"content":{"rendered":"<p>The health benefits of avocados blew me away!\u00a0 They are full of a wide variety of nutrients that help so many health conditions.\u00a0 I was particularly interested to read of their anti-inflammatory properties, since my beloved husband has arthritis, which he manages well with diet and supplements.\u00a0 Anti-inflammatory foods make it as regulars on my grocery list!<\/p>\n<p>Here is a chicken salad recipe that is low glycemic and chock full of foods that are good for you.<\/p>\n<p style=\"text-align: center\">Avocado Chicken Salad<\/p>\n<p style=\"text-align: center\">\u00a0Ingredients<\/p>\n<ul>\n<li>2 large avocados<\/li>\n<li>2 cups cooked chicken, chopped<\/li>\n<li>1 small onion, chopped<\/li>\n<li>1\/2 cup button mushrooms, finely sliced<\/li>\n<li>2 Tablespoons sunflower seed kernels (or chopped pecans, or other nuts)<\/li>\n<li>1 1\/2 cup mayonnaise<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p style=\"text-align: center\">Directions<\/p>\n<p>Chop one avocado and slice the other into one inch slices.\u00a0 Mix all the ingredients except the sliced avocado, which you will fan out over the top of the salad to make it pretty.<\/p>\n<p>If you like your food a little spicier, you can add 2 tsp. curry powder.<\/p>\n<p>This turned out really tasty!\u00a0 Next time I\u2019m going to halve some grapes and throw them in, too.\u00a0 It\u2019s not difficult and is packed with nutrients.
