Surely that was a misprint.\u00a0 Only 3\/4 cup flour in a cake?\u00a0 Not likely.\u00a0 As I studied about coconut flour, though, I saw that, yes, it does take that many eggs to make a successful cake with this healthy type of flour, and it takes a much smaller amount of flour.<\/p>\n<p><a href=\"http:\/\/blog.beliefnet.com\/beyondgorgeous\/files\/2012\/07\/headshot3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1738\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/261\/2012\/07\/headshot3-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a>Coconut flour, as we talked about yesterday, has lots of fiber and is extremely absorbent.\u00a0 It also has no gluten, which makes baking with it a challenge.\u00a0 The info I found says that if you are substituting coconut flour for white flour in a recipe, you can\u2019t use cup for cup.\u00a0 You have to use 1\/4 to 1\/3 cup per cup of grain-based flour.\u00a0 Also, you have to use about 6 eggs per cup of flour just to make your baked goods hold together.<\/p>\n<p>I tried this recipe, and was delighted with the results.\u00a0 It\u2019s moist and tasty &#8212; and guilt-free.\u00a0 The flour and the large number of eggs make this low glycemic and high in protein.\u00a0 There is a lot of fiber in the cake, lowering the GI index number even more.\u00a0 I made it with coconut sugar, which also gives it a lower number than a cake with white sugar.\u00a0 With the coconut milk frosting, it was a real treat!<\/p>\n<p>My grandsons were visiting yesterday when I tried this recipe, and they gave it a two-thumbs up &#8212; although two of the three kids didn\u2019t care for the frosting.<\/p>\n<p>Here is the recipe:<\/p>\n<p style=\"text-align: center\">Coconut Flour Chocolate Cake<\/p>\n<p style=\"text-align: center\">\u00a0Ingredients<\/p>\n<p>\u00a0\u2022 \u00bd cup coconut oil<\/p>\n<p>\u2022 \u00bc cup cocoa powder<\/p>\n<p>\u2022 \u00bc cup coconut milk<\/p>\n<p>\u2022 9 eggs<\/p>\n<p>\u2022 1 \u00bd cups sugar or alternative (I used coconut sugar)<\/p>\n<p>\u2022 \u00be teaspoon salt (Himalayan is best!)<\/p>\n<p>\u2022 1 teaspoon vanilla<\/p>\n<p>\u2022 \u00be cup sifted coconut flour<\/p>\n<p>\u2022 \u00be teaspoon baking powder<\/p>\n<p style=\"text-align: center\">Directions:<\/p>\n<p>1. Melt coconut oil in a saucepan over low heat.<\/p>\n<p>2.Add cocoa powder and coconut milk and mix together. Remove from heat and set aside.<\/p>\n<p>3. In a bowl, mix together eggs, sugar, salt, and vanilla.<\/p>\n<p>4. Stir in cocoa mixture.<\/p>\n<p>5. Combine coconut flour with baking powder and whisk into batter until there are no lumps.<\/p>\n<p>6. Pour batter into greased 8x8x2 or 9x9x2-inch pan.<\/p>\n<p>7. Bake at 350 degrees for 35 minutes or until knife inserted into center comes out clean.<\/p>\n<p>8.
