{"id":1617,"date":"2013-03-01T03:23:49","date_gmt":"2013-03-01T08:23:49","guid":{"rendered":"http:\/\/blog.beliefnet.com\/beyondgorgeous\/?p=1617"},"modified":"2012-12-13T10:00:23","modified_gmt":"2012-12-13T15:00:23","slug":"one-pot-chicken-and-vegetables","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/beyondgorgeous\/2013\/03\/one-pot-chicken-and-vegetables.html","title":{"rendered":"One-Pot Chicken and Vegetables"},"content":{"rendered":"<p>It\u2019s Friday &#8212; recipe day.\u00a0 I have a one-pot meal for you today that even this incompetent cook made successfully.\u00a0 However, this incompetent photographer didn\u2019t get a picture!<\/p>\n<p style=\"text-align: center\">Steamed Vegetable and Chicken Medley for Two<\/p>\n<p style=\"text-align: center\">\u00a0Ingredients<\/p>\n<ul>\n<li>1 cup thinly sliced carrots<\/li>\n<li>2 cup chopped kale with the stems removed<\/li>\n<li>1 cup cubed zucchini<\/li>\n<li>1 onion, slicked thick<\/li>\n<li>sliced chicken breast, 3\/4 thick<\/li>\n<\/ul>\n<p style=\"text-align: center\">\u00a0Directions<\/p>\n<p>\u00a0Bring lightly salted water to a boil in a steamer with a tight fitting lid.\u00a0 Add onions and cover and steam for three minutes.\u00a0 Add carrots and then chicken and cook for at least two minutes.\u00a0 Add kale and zucchini and steam for another three minutes.\u00a0Season with sea salt or Himalayan pink salt to taste.<\/p>\n<p>This is the original recipe, but I gave it a few extra minutes between the chicken and the kale and zucchini because I have a fear of underdone chicken.\u00a0 The time also depends on how much chicken you add.\u00a0 I used two medium chicken breast tenderloins.<\/p>\n<p>You can skip the chicken and just have a vegetable dish.\u00a0 You can also add fish, cut 1 inch thick.<\/p>\n<p>Since the chicken has a glycemic number of zero and the vegetables are close to zero, this is a very low glycemic meal &#8212; so enjoy with a clear conscience!<\/p>\n<p>Eating to live and living for Christ,<\/p>\n<p>Susan Jordan Brown<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It\u2019s Friday &#8212; recipe day.\u00a0 I have a one-pot meal for you today that even this incompetent cook made successfully.\u00a0 However, this incompetent photographer didn\u2019t get a picture!
