That prohibits the sugar rush and big insulin dump &#8212; and subsequent crash.\u00a0 It\u2019s this rise and fall of insulin\u00a0 which instructs the body to store fat.\u00a0 Trehalose can help bypass that scenario.<\/p>\n<p>But is it low glycemic?\u00a0 I perused dozens of Web sites looking for an actual number.\u00a0 One said it was as high as 90.\u00a0 Another said 35.\u00a0 Why the difference?\u00a0 I think I found an answer on the Endowment for Medical Research site which sells Trehalose.\u00a0 They said that Trehalose is made of up of two glucose molecules. These are digested only in the small intestines by an enzyme our bodies make called \u201ctrehalAse.\u201d\u00a0 People who have more of this enzyme digest more TrehalOse and digest it more quickly.\u00a0 That particular site suggested that diabetics and others who are concerned about blood sugar test themselves to see what their own individual response is.<\/p>\n<p>The other advantage of Trehalose is the good that it does your body.\u00a0 It helps protect your cells like it does the cells of the desert plants.\u00a0 Research into using Trehalose to prevent and treat neurological diseases like Huntington\u2019s disease, Parkinson\u2019s and Alzheimer\u2019s has been promising. \u00a0In Alzheimer\u2019s disease malformed proteins get into the wrong areas of the brain and clump together.
