And the more I ate it, the less trouble I went to with it, so that it eventually wound down to carrots and lettuce.\u00a0 The trick to adding more raw vegetables to your diet, I discovered, was to take the time to make jazzier salads.\u00a0 \u00a0 Here is a fruit salad with a poppyseed dressing I tweaked in a healthier direction.<\/p>\n<p><a href=\"http:\/\/blog.beliefnet.com\/beyondgorgeous\/files\/2012\/03\/IMG_20501.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1409\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/261\/2012\/03\/IMG_20501-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p style=\"text-align: center\">Ingredients<\/p>\n<p>For the dressing:<br \/>\n1\/3 cup apple cider vinegar<br \/>\n\u00be cup sugar substitute. (I used Xylitol, but the flavor of honey would work well with this recipe, I think.)<br \/>\n\u00bc tsp. dry mustard<br \/>\n1 tsp. salt<br \/>\n6 tbsp. mayonnaise<br \/>\n3 tbsp. freshly squeezed orange juice<br \/>\n6 tbsp. coconut oil<br \/>\n1\u00bd tsp. poppy seeds<\/p>\n<p>For the salad:<br \/>\nRomaine lettuce, washed and dried<br \/>\nStrawberries, hulled and sliced<br \/>\nBlueberries<br \/>\nFresh pineapple, cubed<\/p>\n<p style=\"text-align: center\">Directions<\/p>\n<p style=\"text-align: left\">Combine the vinegar, sugar, dry mustard, salt, mayonnaise and orange juice in a blender. \u00a0Blend well.\u00a0 Add the coconut oil\u00a0 a spoonful at a time and continue processing until mixed in well. \u00a0Add the poppy seeds and pulse briefly just until blended. \u00a0Transfer to an airtight container and refrigerate until ready to use.<\/p>\n<p style=\"text-align: left\">To make the salad, tear the lettuce into bite-size pieces. \u00a0Plate individual servings of the lettuce in salad plates. \u00a0Top each serving with strawberries, blueberries, and pineapple cubes as desired.\u00a0 You can also add nuts of your choice to give the salad more protein.\u00a0 \u00a0Drizzle lightly with the poppy seed dressing and serve immediately.<\/p>\n<p>This one turned out really tasty for me &#8212; and I really enjoyed salad for a change.\u00a0 I hope you enjoy it, too!<\/p>\n<p>Eating to live and living for Christ,<\/p>\n<p>Susan Jordan Brown<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Salad &#8212; bleuh!\u00a0 That\u2019s how I always felt about it, mainly because I always ate the same kind of salad with the same kind of dressing.
