Now that I\u2019ve moved from our travel trailer into a house and have room to cook, I\u2019ll try to start on a Friday recipe day.<\/p>\n<p>The other difficulty with recipes is that I\u2019m a dreadful cook.\u00a0 It\u2019s hard to tell whether the recipe is a dud or whether I did something that killed it.\u00a0 Here is one that is easy, low glycemic, and turned out twice for me without a fail.\u00a0 You can fix it in a slow cooker, so it\u2019s good for busy days.<\/p>\n<p style=\"text-align: center\">\u00a0<strong>Low-Glycemic Caesar Chicken<\/strong><\/p>\n<p>\u00a0Ingredients<\/p>\n<p>~3 lbs raw boneless, skinless chicken breast, cut in large chunks<\/p>\n<p>~2 cups fresh mushrooms, sliced<\/p>\n<p>~1 (8 oz) bottle Creamy Caesar Dressing<\/p>\n<p>~4 ounces cream cheese<\/p>\n<p>~1 can (10.75 oz) cream of chicken soup<\/p>\n<p>~8 oz mozzarella cheese, shredded<\/p>\n<p style=\"text-align: left\">\u00a0Directions<\/p>\n<p>Pour a bottle of Caesar dressing into a slow cooker. Add\u00a0 the chicken breast chunks and mushrooms, stir to coat, and cover.<\/p>\n<p>Cook on high for about 4 1\/2 hours.\u00a0 Remove a cup or so of the liquid at this point so the finished product will be thick enough.<\/p>\n<p>Mix together the cream of chicken soup and softened cream cheese.<\/p>\n<p>Stir the soup\/cream cheese mixture into chicken and mushroom mix in the slow cooker.<\/p>\n<p>Add mozzarella cheese, stir gently.<\/p>\n<p>Cook another 1\/2 hour until cheese is melted and the mixture is hot.<\/p>\n<p>Serve with rice or pasta cooked al dente.<\/p>\n<p>This makes about 8 half cup servings.\u00a0Remember that this is not low calorie, so you can\u2019t eat the whole pot all by yourself. It won\u2019t make your blood sugar go crazy, though, so you can eat and enjoy!<\/p>\n<p>Do you have a favorite low glycemic recipe?\u00a0 I\u2019m always looking for new ones.
