The Slow-Cooker Lamb Stew Cure from the Our Lady of Weight Loss’s Kitchen.

As promised in Sunday’s blog post: Go Green: St. Patrick’s Day Diet, here follows another GREAT St. Patrick’s Day recipe!

Irish Stew a.k.a. The Lamb Stew Cure
I hear-tell from the Irish side of my family (the Hickeys from West Cork) that Lamb Stew is Irish penicillin (better than Vegetable Soup!). Apparently, the combination of lamb, potatoes, leeks and carrots will cure whatever ails you! This recipe serves approximately 8 people at 1 cup per person and is under 300 calories per serving.
Ingredients: 2 pounds boneless leg of lamb, trimmed and cut into 1-inch pieces (be sure to trim fat away to keep it healthy) *2 pounds white potatoes, peeled and cut into 1-inch pieces * 3 large leeks, white part only, halved, washed and thinly sliced * 4 large carrots, peeled and cut into 1-inch pieces * 3 stalks celery, thinly sliced * 1 15.5-ounce can (approx) of low-fat chicken broth * 2 teaspoons chopped fresh thyme * salt n’ pepper to taste * 1/4 cup fresh parsley leaves, chopped * a sprinkle of fresh chopped chives (optional)
Instructions: Combine lamb, potatoes, leeks, carrots, celery, broth, thyme, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the lamb is fork-tender, about 8 hours. Stir in parsley and chives before serving.
