Vegan and happy about it!
Rachel Randolph’s two-year old has never had a Happy Meal or tasted a chicken nugget. He’s never had cow’s milk or a scrambled egg, but he's eaten his share of black bean veggie burgers, tofu scramble breakfast tacos, cashew mac-n-cheese, and soft-serve ice cream made from 100 percent frozen fruit. He knows what ingredients to grab to make a tropical green smoothie, “moo moose” he calls them -- and his favorite dessert is a chocolate cupcake.
