Try a new vegetable today. Something you've never had before. Yesterday, a man in my "Joy of Weight Loss" group said he'd never had mushrooms, and a woman said zucchini was new to her. Have you ever had parsnips? Or bok choy cabbage? How about celery hearts? Or artichokes? Last night my wife asked me to stop at a salad bar and get her a salad for dinner. I decided to give her a total treat, and let her try some new vegetables. So instead of the usual lettuce this time I tried mesclun greens and spinach. I added carrots, green peppers, tomatoes--just for kicks I got her some beets, radicchio, endive, and artichoke hearts. To spice it up, I asked the tosser to throw in some dried cranberries. For protein, I chose almonds instead of the usual chicken or tuna. A little gorgonzola cheese topped it off. Then, we dressed it with a generous tablespoon of balsamic vinagrette, instead of a fatty ranch or blue cheese. Let others know what you tried, and how you like it.
