INGREDIENTS:
1 pound pork, cubed
Salt to taste
Flour
1/4 cup (1/2 stick) margarine
3 cups water
1 (14-ounce) can tomato wedges
1 (4-ounce) can chopped green chiles
1/2 to 1 teaspoon chopped canned jalapeno chile
1/4 teaspoon chopped garlic
TO PREPARE:
Sprinkle the pork on all sides with salt and coat with flour. Saute the pork in the margarine in a deep skillet or large heavy saucepan. Add the water and stir to loosen any browned bits. Simmer for 1 to 2 hours or until the pork is tender, stirring occasionally.
Process the undrained tomatoes in a blender until chunky. Add the tomatoes, green chiles, jalapeno chile and garlic to the pork mixture and mix well. Cook for 1 hour longer, stirring occasionally.
