INGREDIENTS:

  • Butter and sugar to prepare pan
  • 1 cup butter
  • 1-3/4 cups sugar
  • 2 cups sifted cake flour
  • 5 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract

TO PREPARE:

Heat oven to 350 degrees.  Grease Bundt pan with butter; sprinkle generously with sugar.  Cream 1 cup butter and 1-3/4 cups sugar, using electric mixer.  Continue to beat, adding flour and eggs alternately.  Mix in vanilla and lemon extract.  Pour into prepared pan and bake in preheated oven for 1 hour.  This airy cake needs no glaze as the butter-sugar coating gives it a glossy crunch.
