INGREDIENTS:

  • 1 large cucumber
  • 4 cups cubed poached chicken
  • 1-1/4 cups feta cheese
  • 2/3 cup sliced Greek or black olives
  • 1/4 cup chopped parsley
  • 1/2 cup mayonnaise
  • 3 garlic cloves, minced
  • 1/2 cup plain yogurt
  • 1 tablespoon fresh oregano
  • Salt and freshly ground pepper, to taste
TO PREPARE:

Peel, seed and chop cucumber. Combine all ingredients by tossing lightly with a fork. (Better if made the day ahead.) Serve chilled or at room temperature.

SERVES: 4 – 6
