Beef Tenderloin and Herb Salad

Beef tenderloin filets 2 (5-ounce)
Salt ¼ + 1/8 teaspoon
Pepper to taste
Fresh lime juice 1 teaspoon
Olive oil 1 ½ + 2 teaspoons
Baby greens 2 cups


Directions
  1. Slice each filet horizontally into three equal pieces and season with ¼ teaspoon salt and pepper to taste.
  2. Whisk together lime juice, 1 ½ teaspoons olive oil, 1/8 teaspoon salt, and pepper to taste. Toss with the greens. Transfer salad to two plates.
  3. Heat 2 teaspoons olive oil in a medium to large skillet over medium-high heat. Add meat and cook for 1-2 minutes on each side, depending on desired degree of doneness. Serve over or along side salad.

A systematic review found that participants given chewing gum after abdominal surgery may have a faster return to normal for their digestive system. Unfortunately, the quality of trials is low and more research will need to be done before this simple solution is confirmed.
