Lemon-tarragon Salmon

Ingredients and Preparation
Ingredients Measures
Juice of ½ lemon
Fresh tarragon, finely chopped 1 tablespoon
Reduced-fat sour cream ½ cup
Salmon, cut into 2 filets ¾ pound
Cooking spray
Salt ¼ teaspoon
Freshly ground black pepper to taste


Directions
  1. Preheat oven to 425°F.
  2. In a medium bowl, whisk together lemon juice, tarragon, and sour cream. Set aside.
  3. Place salmon, skin-side down, in a baking dish covered with cooking spray. Season fish with salt and pepper, and then spread the sour cream mixture over the salmon.
  4. Bake fish about 20-22 minutes, until opaque throughout, and then serve.

Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. Sauté 10-12 trimmed asparagus spears 5-10 minutes, until they reach desired tenderness.

Fecal Transplants Induce Ulcerative Colitis Remission

A randomized trial found that fecal microbiota transplantation had a higher rate of remission in patients with active ulcerative colitis than those who recieved placebo. Fecal transplantation is believed to help the intestine develop a healthy balance of bacteria in the gut which can help the intestine recover and function more effectively.
