Steak and Blue Cheese Wraps

Reduced-fat mayonnaise 2 tablespoons
Crumbled blue cheese 1 tablespoon
Freshly ground pepper to taste
Cooking spray
Sirloin steak, trimmed of visible fat and cut into ¼-inch strips ½ pound
Salt ¼ teaspoon
Freshly ground pepper to taste
Romaine lettuce, chopped 2 cups
Grape tomatoes, halved ½ cup
Red onion, thinly sliced ¼
Flour tortillas 2 (10-inch)


Directions
  1. In a small bowl, mix together mayonnaise, blue cheese, and pepper. Set aside.
  2. Heat a large nonstick skillet over medium-high heat and coat with cooking spray. Season steak strips with salt and pepper, add to pan, and sauté 3-4 minutes, or until meat reaches desired degree of doneness.
  3. Combine lettuce, tomatoes, and onions in a medium bowl. Spread half of the blue cheese mixture over each tortilla, layer with equal parts of the steak and lettuce mixture, and roll up.

Preheat oven to 400°F. Slice 1 medium sweet potato into ½-inch strips. Place in a single layer on a cookie sheet, and drizzle with 1 tablespoon olive oil and ¼ teaspoon salt. A randomized trial found that fecal microbiota transplantation had a higher rate of remission in patients with active ulcerative colitis than those who recieved placebo. Fecal transplantation is believed to help the intestine develop a healthy balance of bacteria in the gut which can help the intestine recover and function more effectively.
