Herb Grilled Filet Mignon

Freshly ground black pepper to taste
Dried rosemary ¼ teaspoon
Dry mustard ½ teaspoon
Salt ½ teaspoon
Garlic cloves, minced 2
Beef tenderloin 2 (6-ounce) filets

  1. Prepare grill.
  2. Trim visible fat off meat.
  3. Combine pepper, rosemary, mustard, salt, and garlic. Rub mixture evenly over both sides of steak.
  4. Grill three minutes on each side or until cooked to preference.

Side Suggestions: Baked Sweet Potatoes
. Wash and scrub 2 medium-sized sweet potatoes. Dry and punch several holes in them with a fork to let steam escape when baking. Place on a baking sheet and bake at 425˚F for about 40 minutes. (Or cook in microwave 6-8 minutes, turning halfway through.) Serve each potato with ½ tablespoon butter. Side Suggestions: Fresh Tomatoes
Wash 2 medium-sized tomatoes. Slice into thin pieces or wedges and garnish with fresh chives. Nutrition Info (for 1 sliced tomato): 26 calories; 6 g carbohydrate; 1 g protein; 0 g fat; 1.4 g fiber; 11 mg sodium. Exchanges: 1 vegetable.
