Large, crispy lettuce leaves (butter or iceberg work well)
Heat oil in a large skillet over medium-high heat. Add onion and sauté 2-3 minutes, or until slightly softened. Add turkey and sauté 6-8 minutes, or until cooked through.
Stir in peanut sauce, hoisin sauce, and soy sauce, and cook for 2-3 minutes.
Remove from heat and stir in scallions and bell pepper. Season with salt.
Spoon turkey mixture into lettuce “wraps,” wrap, and enjoy.
