Our Lady of Weight Loss

Out for Blood? Blood Orange Recession Proof Recipes, that is.

Whether or not you have had the pleasure of cutting into a perfectly ripe blood orange and experienced its ruby juices squirting out, dripping down and soaking into its skin, followed by a taste explosion, or not, you will love these simple, colorful and scrumptious guilt-free, recession proof recipes. Enjoy!!!
Roasted Beet and Blood Orange Salad
Ingredients: 2 pounds gold beets * 2 pounds red beets * extra virgin olive oil * salt and freshly ground pepper * 6 blood oranges * 1/2 pound baby spinach * 1/4 cup sherry vinegar
Instructions: Preheat oven to 400 degrees * wash beets * trim the tops and roots from the beets * place the beets on a large enough piece of aluminum foil to fold over and seal (red beets on one sheet; gold beets on another) * drizzle with extra virgin olive oil * seal the foil * place both beet packages on sheet tray and roast in preheated oven for approximately 1.5 hours; until beets are easily pierced with a knife. * allow beets to cool and then peel. (FYI … beets are messy; this is a really great way to roast ‘em).
NOW … Peel blood oranges * remove all the pith * slice into 1/4 inch rounds. * wash the spinach well and dry * cut cooled beets into wedges (first the red and then the gold, keeping them separate less they ‘bleed’ into each other) * toss each with sherry vinegar * season with salt and pepper * let marinade a few hours. * In large bowl, toss beets and their juices together * add orange segments * toss gently * add spinach and toss extra gently! * salt and pepper to taste. Serves 6
Blood Orange Omelet
Ingredients: 3 blood oranges * 3 egg whites * 1 egg * lemon juice from 1/2 fresh lemon * 3 tablespoons orange juice (blood or otherwise) * non-stick spray * 2 tablespoons powdered sugar. * salt * 1/2 tablespoon of butter.
Instructions: Preheat oven to 450 degrees. * Peel blood oranges; remove pith, cut into slices lengthwise. * Beat one whole egg with salt, pepper and lemon and orange juices until thick and lemon-colored. * Beat egg whites until stiff, cutting and folding them into the first egg mixture. * Spray medium size skillet/pan. * Heat pan over medium to low flame. * Melt butter in pan. * Pour mixture into pan evenly. * Cook slowly (low heat). * When ‘puffy’ and delicately browned underneath, place omelet in oven and bake until top is light brown.
NOW … woo hoo, the fun part. Place omelet on plate; fold in 1/3 of the slices of orange. * Sprinkle with 1/2 powdered sugar. * Place remaining oranges around omelet and sprinkle with the remaining sugar. Serves 4.
Blood Orange Mimosa
Ingredients: 1 cup fresh blood orange juice from about 6 blood oranges * champagne, chilled.
Instructions: Pour 1/4 cup juice into each of the 4 champagne glasses. Slowly add champagne. Serves 4.

  • Blood oranges, originally from Sicily, are juicy, sweet and have a dark red interior.
  • Blood oranges’ red color comes from a pigment called anthocyanin. It is not generally found in citrus fruits, but is found more commonly in red fruits and flowers.

    Increase Energy: 4 Simple, Fast and Easy Ways to Say Yes to Life

    When we are energized, feeling good, hydrated, smiling and breathing in the poetry of life, we are less likely to gravitate towards food as a form of self-medication and more likely to open up to living la vida feliz … The Happy Life.
    Here follows four sure-fire ways to get your energy on the rise and get you to living life happy.
    1. BREATHE. Ever see a baby breathe? You will see that their stomach rises and falls with each breath. They are filling their lungs with oxygen and oxygenating their body. You cannot receive sufficient oxygen with shallow breaths; you must breathe deeply. Breathe like a baby!
    2. DRINK WATER. We are mostly water. Between 60% and 70% of our body weight is water; our brains are 75% water. Imagine how dried up your thinking is without water? Your skin? Wrinkle city!!! Your intestinal track? Can anything glide through it??? A deficiency of water can alter the concentration of electrolytes such as sodium, potassium, and chloride. Water has a profound effect on brain function and energy levels!
    Drink at least half your body weight in ounces of fresh water daily! I know that you think you’ll have to stop at every bathroom from here to Timbuktu, but not true. Your body will adjust rather quickly and happily!
    3. CLEAR YOUR CLUTTER. There seems to be a correlation between physical clutter, mental clutter and body clutter. Your messy, disorganized space is a mirror of your mind and it will drain your energy. It will either consciously or unconsciously frazzle you!
    Often we say we are going to clean up all in one day and we don’t, because it is overwhelming! Try dedicating 15 minutes per day to clearing your space. Set a timer and get going!
    4. TAKE IN THE SUN RAYS. According to a Harvard University study, taking in sunlight first thing will have a positive impact on the retina that leads to better focus and energy production in the brain. If you live in an area that is not producing bright sunlight every morning, it might be a good idea to invest in a bright indoor light.
    Or … make sure you sit near a window for 20 minutes during the day.

    Money Matters: How to Get America’s Energy and Economy Flowing Freely Again

    There is no doubt that we are in crisis. And yes, President Obama has assembled a kick-tush team of experts, and while these experts are diligently working day and night to implement a stimulus package to re-kindle the economy, I suspect they are so bogged down in financial flow charts that they haven’t stopped to consider our collective flow – the great energy flow.
    I’m talking about Chi, the life force that permeates the world. Clearly, our collective Chi, is off. When we are in the proper state of balance, the energy – the Chi – flows smoothly and effortlessly through the space and it supports rather than fights against the space. Balancing our Chi is a crucial part of living a health, calm energetically balanced and prosperous life.
    We are in a state of imbalance, and this imbalance can lead to ill health and discomfort in the environment. We cannot bloom, flourish or prosper in a state of imbalance or disharmony.
    What to do? Follow these simple laws of Feng Shui, get the energy flowing, move from imbalance into balance and return our country to a living, breathing and healthy state of prosperity.
    Clutter to Clear. The planet Venus, which governs prosperous energy, cannot enter our homes, offices, banks or stock market trading floor if there is clutter blocking its path. Have you seen the mess on the trading floors; have you heard the noise level?
    Leaks. Check the White House for leaky faucets (drip, drip, drip), leaky windows (cold air blowing in?), as well as leaks of information! If the White House is leaky, so goes the money.
    Toilets. And how about the toilets in the Treasury Department? Has anyone put the lids down? Let’s face it, this mess we’re in was primarily created by men. Do they ever put the lids down? If the lids are left up, the energy is being “flushed away.”
    Paint the White House Red. Red is the color of happiness and prosperity in China and is used to attract good luck. Secretary of State Clinton recently asked the Chinese government to keep on buying our Treasury bonds. They seem to be in good shape. Are you following my logic? If the idea of painting the White House Red is too much, how about the front door?
    Gold Objects. It is essential that the White House display actual money and gold objects in the money area of the ‘house.’ (Far left corner from point of entry). A bowl of foreign coins works well (this also comes in handy if the dollar slides).
    Lava Lamps. The colors purple, red and green support prosperity energy. You could paint the corners of the rooms with these colors, or you could more easily purchase a lava lamp I purple, red or green! The great thing about a lava lamp is that it moves! Thus, you are keeping the money circulating in our lives!
    That should do it!
