Grey’s Anatomy: Seviche or Ceviche either way, delicious! (recipe included)

Did you watch Grey’s Anatomy last night? I did. And I have to say, I really thought the seviche/ceviche comment about the poor girl who was mangled was tasteless (HA! pun intended) and just plain dumb.
Nevertheless, it did bring Ceviche to mind … a delicious dish that is low in calories, carbs and fat. Something you might want to order the next time you’re dining out!
Ceviche (also spelled cebiche or seviche) is a seafood dish that is marinated in a citrus-based mixture, lemons and limes being the most commonly used. In addition to adding a fresh flavor and bite to the dish, the citric acid causes the proteins in the fish to become ‘denatured,’ which pickles or ‘cooks’ the fish without heat. This low carb, low calorie dish (approximately 175 per cup) is bursting with flavor, absolutely de-lish, totally satisfying and is 100% guilt-free.
It is popular in mainly Latin American countries such as Peru, Panama, Ecuador, Mexico, Guatemala, Columbia and Chile. Both finfish and shellfish are sued; finfish is typically raw (denatured as described above), while the shellfish is typically cooked.
While Peru is often noted as the birthplace of ceviche, each country puts its own touch on the dish by adding a variety of garnishes. In Peru, ceviche is served with slices of cold sweet potatoes or corn-on-the-cob. In Ecuador, it is accompanied by popcorn, nuts or corn nuts.
If you’d like to give it a try at home, here’s a to-die-for recipe!
Ceviche a la Our Lady of Weight Loss
Ingredients: 2 pounds tilapia fillets, cubed * 10 garlic cloves, chopped * 2 tablespoons fresh cilantro, chopped * 1 rocoto (Peruvian hot pepper) seeded and chopped * Salt n’ pepper to taste * Juice from 12-15 limes, freshly squeezed, strained. Enough to cover fish!!! * 1 red onion, thinly sliced and rinsed
Directions: Combine all ingredients except red onion and mix well. * Place red onion on top and let it marinate in the refrigerator for at least 3 hours before serving. * Before serving, mix well with slices of cold sweet potato and corn nuts.

Pampering 101: Cookies and Milk

I’ve been giving the idea of pampering myself great thought. What am I truly craving? What do I need, on a cellular level? A hot bath? A day at the spa? No and No! The answer wasn’t coming, so, I tuned into my body and I asked her directly, “Dearest Body, she who does such an amazing job getting me from here to there each and everyday, is there something that you need, want? How might I shower you in kindness and extreme care?” And my body said, “Nap. I want to take a nap. You just keep overriding my feelings of exhaustion. I want to take a nap.”

The Exhausted Modern World.
The modern world puts enormous value on being as productive as humanly possible, which translates into working through lunch, staying late at the office, scheduling play-dates up the wazoo (or is it gazoo?), taking extra classes. …. You name it, and we’re trying to fit it into our schedules. Our calendars are about to go up in smoke!
It almost feels punishing, doesn’t it?
When exhausted you function less efficiently, feel frustrated, overwhelmed, and guess what … you eat way more. Your body is sending signals that you are low on energy, because it needs more fuel to keep going!
Downtime/Nap Time: A Natural Part of Your Day.
Napping is an opportunity for our minds and body to take a break. Many mammals take naps; and in other parts of the world, napping a.k.a. siestas are worked into the daily routine.
Napping Promotes Health and Well-Being:
30 minute naps promote physical well-being, improve memory and mood;
20 minute naps sharpen your senses and revitalize you; and
10 minute naps can improve mood … feel happy!
If possible, take a nap at the same time every day and use an alarm clock (initially, anyway, until it becomes a part of your routine).
New point of view: Napping is essential to my well-being. It’s okay to crawl up in a corner for a few minutes and close my eyes.

Autumnal Equinox 2009 : Recipes

As the temperature cools down, and the leaves turn from green to orange, red and yellow, my kitchen comes alive. The pots and pans start humming, and sweet, tart, and tasty aromas fill the air promising and delivering great comfort. Autumn is time to cozy up.
Here are my favorite warm, healthy, filling, and comforting autumn recipes, which by the way, are all Our Lady of Weight Loss approved. I’m determined to keep those 50 pounds that I lost seven years ago LOST! I don’t plan on finding them anytime soon, no matter how much comfort food I crave.
My autumn mantra is: cozy, comfy…and healthy. Bon appétit!
10 Healthy Autumnal Yummy Tummy Recipes:
Leeky Chicken Soup
“Grandma’s New Age Penicillin.”
Fun Factoid: Hippocrates, the father of medicine, prescribed the leek as a cure for nosebleeds.
Serves 6
Ingredients:
2 tablespoons olive oil
10 medium leeks, trimmed, sliced, and well-washed (approx. 2 cups)
2 large baking potatoes, grated
2 medium carrots, grated
1 bunch parsley, chopped
8 cups chicken broth or vegetable broth (There are some great brands now that are organic and low-sodium.)
Salt and freshly ground pepper to taste
Instructions:
1. Heat the oil in a 6-quart pot over medium heat.
2. Add the leeks, potatoes and carrots.
3. Sauté until softened, 5 to 10 minutes. (If you feel that you need more oil, try adding a bit of water instead.)
4. Add the parsley, broth, salt, and pepper.
5. Bring to a boil.
6. Reduce the heat to low and simmer, covered for about 40 minutes or until tender.
