Our Lady of Weight Loss - Sweet Borscht CureBorscht is a culinary favorite in many Central and European countries. Its main ingredient – the sugar beet – can easily satisfy your sweet tooth.
Beets have the highest sugar content of any vegetable, and they are low in calories. Only 75 per cup! Could it be that this simple recipe from the Our Lady of Weight Loss kitchens is the secret ingredient to your weight loss success?
Before I share Our Lady of Weight Loss’s Righteous SWEET BEET BORSCHT Recipe, here follows some interesting information about beets!
Sweet Beet
The beets we eat are called red beets, root beets and/or table beets. They are a root vegetable and both their root (the beet) and their leaves (the greens) are edible. They are grown in more than 30 states and are available throughout the year, although their peak season is June through October. In other words, your beets are peaking now baby!
Small, young beets (about 1-1/2 in. diameter) are best because they are tender little things and cook up faster than their tough, woody cored chubby (over 2 in. diameter) counterparts.
Beets should be smooth, hard, round and a deep red color, as well as blemish free. The taproot, the part that extends from the bulbous part of the beet, should be slender. If you are planning on eating the greens, be sure that they are small, crisp and dark green, measuring no more 8 inches. Nor should they be limp or yellowed. (Wow, that’s a lot to remember.)
And one more thing … Never and I mean never cut or peel them before cooking in liquid, lest they will ‘bleed’ and turn a very unappetizing brown. You may, however, scrub them gently and rinse.
To Bake: Wrap beets in foil, place in baking pan and bake in a 350 degree F to 400 degree F oven until soft (1 1/2 to 2 hours). Unwrap foil and let them stand until cool enough to hand, then peel.
To Boil: Some of the color and nutrients may be lost in the boiling process, but this is the most common way to cook beets. Place beets in a pot of boiling water, cover, and simmer until the beets are just tender (40 minutes to 1 1/2 hours, depending on size and quantity of beets).
To Steam: Place beets in a vegetable steamer over boiling water (approximately 40 minutes).
To Microwave: Place about one pound of whole beets in a microwavable dish with 1/4 cup liquid. Cover and cook on high until tender (10 minutes or so).

The Sweet Beet Borscht Cure : Beat Sugar Cravings
Ingredients: 2 red beets, peeled and diced * 1 Yukon gold potato, chopped into bite size cubes * 1 carrot, peeled and diced * 1 turnip, peeled and diced * 1 cup of shredded green cabbage * 4 cups of organic vegetable broth * 1 cup of crushed tomatoes * fresh dill * salt n’ pepper to taste * low fat sour cream
Instructions: Combine all ingredients in a large pot * bring to a simmer * cover and cook until red beets and potatoes are tender (about 40 minutes or so) * add dill, salt, pepper to taste * chill and service cold with low-fat sour cream

Lemon Angel: Healing Elixir from Heaven

What do you do when life hands you lemons? Make lemonade? How about something more imaginative, exotic? With or without the Absolut Citron, this amazing cocktail from Shoes & Cocktails, “Watermelon Lemonade,” refreshes and revitalizes.

The Ingredients/Recipe:
Serves 3 or 4
Cut ½ of a small watermelon into large chunks (do yourself a favor and get a seedless melon)
Puree in a blender, then strain into a pitcher (you should have enough liquid for a 3 to 1 alcohol ratio)
Add juice of two lemons
Add 3 or 4 shots vodka, preferably Absolut Citron
Mix well, then pour over ice
Garnish with fresh basil

Modifications: I generally prefer things tart rather than sweet. If this recipe is too tart for your liking, I recommend adding more watermelon, or 1 to 2 ounces of triple sec, Cointreau, or some other form of simple syrup. You can also garnish with mint, and/or lemon or watermelon wedges. I prefer basil because it is growing outside my backdoor, and nothing beats that smell in the summer!
Bonus tip: Here’s another perfect opportunity for using flavored ice cubes. Pour watermelon puree into your ice tray and freeze.

Weighty Confession: But I only had one spoonful.

Our Lady of Portion ControlThese past few weeks, I have watched the numbers on the scales of injustice slowly rise, 1/4 pound to a 1/2 pound per week.
But Why?
Nothing obvious that I could detect, for I swear I did not dive into a vat of chocolate, nor did I devour a bag of vinegar & salt potato chips!
It Hit Me.
This morning, however, while brewing my morning pot of coffee, it suddenly dawned on me that in my deep morning fog, I was measuring a teaspoon of organic, raw sugar with the same scoop that I use to measure the coffee grains. In other words, I was counting the scoop, which in reality is the equivalent to two tablespoons, as one teaspoon.
Mindless Eating.
Talk about being unaware and sleepwalking! Which, by the way, I was, since I am generally making coffee somewhere between 5:30 and 6:00 a.m.
Calories In / Calories Out.
Nevertheless, here’s the point – beyond my fog. I was thinking that I was putting in one teaspoon of sugar, approx. 15 calories, but in actuality I was putting in two tablespoons, approx. 100 calories. That’s 85 extra calories. Some days I have two cups of coffee. That’s an extra 170 calories. Multiply that by 7 days, and there you go … the scales of injustice are going to move up somewhere between 1/4 and 1/2 a pound.
Lesson Learned.
If you hit a plateau, or start to gain for no apparent reason, your first step is to stop and look again. You may be doing something that you are not aware of!
And so I offer my Weighty Confession to Our Lady of Weight Loss.

Weighty Confession
In my morning stupor,
so mindless and unaware,
I sugared myself up,
by not beyond repair.
Awake and aware,
I move forward now.
with teaspoon in hand,
beyond the fog.
All Is Forgiven Move On

In real life what’s the truth about our words?
Our society has become desensitized to the power of the word. We publically hear and speak things that ears should never be subjected to. We have disregarded the energy and effect that is contained in the word whether spoken or heard.
The first line of the bible tells us that the way that God created was with the word! The book of Hebrews tells that the word can be so powerful as to be able to divide soul from spirit. Jesus taught by the spoken, not written word. Saints and martyrs were killed and maimed for what they spoke not for what they thought.
The word needs to be handled with care and as much responsibility as a loaded weapon.
“So I tell you that for every unfounded word men utter they will answer on Judgment day, since it is by your words you will be acquitted, and by your words condemned.” (Mt. 12: 36-37).
