Just in case you fall off the weight loss bandwagon, and I’m not saying you will, but just in case, here’s a recipe that has magical powers.  It will get you back on the bandwagon.  It’s delicious, easy to make, and healthy.

Remember, weight loss is a process.  It requires work, it involves challenges – and falling off the wagon and finding yourself a bit bruised and bloated is par for the course.

Those who reach their weight loss goals are the ones who get back on the wagon again and again.  They learn to see that these setbacks are temporary lapses, and they learn from them. They look at the big picture over a long period of time.  They understand that there are no magic bullets, no quick fixes.  The turtle wins this race.

So…just in case you experience a lapse, here’s a recipe that can help you set the intention to get back on!  Enjoy!!!

Back-On-the Bandwagon Baked Beans

Ingredients:

1 teaspoon olive oil
1/2 cup diced shallots
2 garlic cloves, diced
3 turkey bacon strip
1 tablespoon chile powder
1 tablespoon ground cumin
1 (14 1/2 oz.) can diced tomatoes with olive oil and red wine flavor
1 (14 1/2 oz.) can pinto beans, drained
1 (14 1/2 oz.) can red kidney beans, drained
2 tablespoons hot sauce, smoky flavor (I love Chipotle Sauce.)
1/2 cup light brown sugar
1/2 to 3/4 cup water
1 tablespoon cider vinegar
salt & pepper to taste

Instructions:

Cook Turkey Bacon as directed on package.
In a large pot, combine olive oil, shallots and garlic; cook on medium heat until shallots are soft (about 3 to 5 minutes).
Crumble cooked turkey bacon, add with remaining ingredients.
Bring to boil and then simmer for 45 to 50 minutes, stirring occasionally.

Dishes like this are always better the second day. So, I make a pot, let it cool, stick in the fridge and reheat the following day.
