dysfunctional chef copyAs we know, I am the Dysfunctional Chef.  Not only do I have an ambivalent relationship with the kitchen, the last time I whipped up a fig sauce, I had to duct tape my mouth shut, lest I tasted away all of the incredibly sweet and amazing sauce before it hit the table.  No joke!  (See Dysfunctional Chef Duct Tape Video).

So, it was no easy feat for me to whip up dinner for six at a moment’s notice.  I had all the ingredients for a quick two bean chili on a bed of rice.  But what about a side dish?  Something beyond the usual salad?  Out of thin air, I managed to whip up a 5 yum side dish that was astonishingly good and easy! 5 Yums for Sure!

Side Dish Delish:  Avocado, Olive Oil and Lemon

Ingredients:

2 ripe avocados
2 T olive oil
2 T freshly squeezed lemon juicesea salt
pepper

Instructions:

Peel avocados, pop the pit, and slice thin.
Place artfully on plate.
In a small bowl, mix together the olive oil, lemon juice.
Gracefully and lovingly drizzle the mixture on avocado slices.
Salt and Pepper to taste.

Serve with anything and everything or on its own.  Simple, healthy, delish!!!
