dysfunctional chef copyThis morning, Our Lady of Weight Loss and I took a quick ride down the road to the local market to buy some fruits n’ vegetables.  (OLofWL road gunshot.)  Upon entering the market, we eyed the most beautiful display of peaches ever, in the history of peach displays, and bonus–the peaches were reasonably priced and ripe for the takin’.  So we did…take ’em…home…and got busy.

We pulled a copy of our book from the bookshelf,  “All Is Forgiven, Move On:  Our Lady of Weight Loss’s 101 Fat Burning Steps on Your Journey to Sveltesville,” zeroed in on the peach cobbler recipe and had the best time slicing the peaches, crumbling the Social Tea cookies and sampling the finished product.  Yum Yum Yum Yum Yum = 5 yums!

Without further ado, from the OLofWL Kitchens –

PEACHY KEEN VINTAGE COBBLER
Serves 2 / approx. 100 calories per serving

Ingredients: 

1.5 cups peach slices
2 T peach nectar
1 tsp brown sugar
1 tsp mind, finely chopped
1 Social Tea cookie, crumbed

Instructions:

Preheat the oven to 375 degrees F.
In a small bowl, combine the peach slices, peach nectar, sugar and mint.  Toss.
Pour the peach mixture into a small baking dish.  Top it with the crumbled cookie.
Bake the cobbler for 20 minutes or until bubbly.

Needless to say (but I’ll say it anyway), if you want to double or triple the recipe, be our guest!
