Side dish? Main dish? The perfect healthy summer snack? Yes to all! This Tomato and Chickpea Salad is simple yet refreshing, oh so satisfying, and Our Lady of Weight Loss approved!  Can it get any better than this?!

Tomato and Chickpea Salad
Serves 4 to 6

Ingredients:

1 (15 oz.) can chickpeas, drained and rinsed
1 pint cherry tomatoes, halved
20-30 large basil leaves, minced
3 cloves of garlic, minced
salt n’ pepper to taste
extra virgin olive oil, drizzle  (high quality:  you get what you pay for)

Directions:

In a large enough bowl, toss all ingredients together.
Chill for a half hour (more or less).
