dysfunctional chefIf you are wondering, what IS the sexiest vegetable of all, I’m here to tell you, “The Cucumber, of course!”

As most of you know, it’s been well over ten years (closing in on 12 years, actually!!!) since I permanently removed over 50 pounds with Our Lady of Weight Loss by my side.  Part of my permanent fat removal plan was to ‘fill’ up on life; to get involved in fun activities, think about something other than my next meal.  One of my favorite things to do was to ‘make art about food’ instead of eating it.

My very first WEIGHT LOSS ART series was The Sexy Vegetable Series, and without a doubt the sexiest vegetable of them all is the cucumber!  Specifically the English cucumber, from the “burpless” variety.  Actually, cucumbers are classified into three main varieties:  “slicing”, “pickling”, and “burp-less.”

English cucumbers are sweeter than your basic cuke; they have a thinner skin, are nearly seedless, and are reported to be easily digested.  They can grow as long as 2 feet.  :)   You can find English Cucumbers in grocery markets, shrink-wrapped in plastic.

Here follows three of Our Lady of Weight Loss’s favorite CUCUMBER SMOOTHIE recipes that can be made in a juicer, a blender or one of those new fancy machines that leave the pulp in!!!

Cucumber and Pear Smoothie
1 large cucumber, peeled and seeded
1 cup fresh baby spinach
1 cup kale leaves, chopped
2 pears (seeded-either core it or slice it and remove seeds)
1 tablespoon agave
1/2 cup water (add slowly; adjust to your liking)
ice as needed

Cucumber and Cantaloupe Smoothie
1/2 ripe cantaloupe (needless to say, just the fruit, not the seeds or the skin J )
1 large cucumber, peeled and seeded
1 cup watermelon
2 teaspoons lime juice, freshly squeezed
1 cup baby spinach leaves
1 tablespoon agave
1/2 to 3/4 cup water  (add slowly; adjust to your liking)
an ice cube or two—even three, as needed

Cucumber Pineapple Smoothie
1 cup frozen pineapple (or fresh; but the frozen aspect adds a fabulous chill to it!)
1/2 cup strawberries, fresh
1 cup baby spinach leaves
1/2 large cucumber, peeled, seeded
ice, if needed
