She’s a Stacked Triple Decker Tomato Slider
1 teaspoon Dijon mustard
1 T. white wine vinegar
1 T. extra virgin olive oil
4 cups arugula leaves
1/4 cup thinly sliced red onion
8 small tomatoes, cut crosswise, stem removed (with the little nub* on top), into 3 sections!
8 ounces smoked salmon, divided into 16 portions (remember, this a triple decker – more spaces to fill)
thin slice of mozzarella (optional)
salt n’ pepper to taste
Whisk together the Dijon mustard, wine vinegar and olive oil. Add arugula and onion. Gently toss to coat.
For easy and synchronized snacking, place tomato slices side by side.
Top four slices with one portion of smoke salmon, small portion of arugula, and a thin slice of mozzarella if you like (totally optional). Place tomato slice on top, repeat layering. Top off with another tomato slice, nub side up!
NOTE: Salt n’ Pepper. Do you really need to add a little salt n’ pepper into the salad or onto the middle tomato slice, maybe? Hmmmm … depending on your salt intake and taste buds, maybe? Again, optional with awareness.
*Nub … so this dysfunctional chef wants to know??? What is the ‘real’ name, the technical name of the tomato nub? It couldn’t possibly be nub, could it?
