EAT Scrumptious: Cherry Walnut Salad

EAT THIS: Summer Salad – Cherry, Walnuts and Goat Cheese from your favorite Dysfunctional Chef !!!

I just returned from the corner fruit stand where I scored 2 pounds of fresh cherries, just in time to ‘cook up’ a fabulous lunch.
Well … I don’t mean to imply that I am going to actually cook, as in turn on the oven.  No way, especially given the fact that the temperature is on the rise (already over 90 degrees), and like – holy cow – the humidity, the heat index – whatever they call it, makes it feel like 150 degrees (okay, slight exaggeration).
Point being, I am going to toss up an incredibly delish salad for  lunch today.  Happily, I have all the ingredients handy, as well as the tools necessary.
Do they call things you cook with ‘tools?’  Whatever you call it (cherry pitter?), you’re going to need something to remove those pits from the cherries!

CHERRY WALNUT SALAD

Ingredients:

  • 1 (10 ounce) bag of pre-mixed salad greens (geeze louise, how easy is that?  you don’t even have to chop it up and I think they pre-washed too).
  • 2 tablespoons raspberry vinaigrette (Please do read the label for calorie count on vinaigrette, because they range from almost nothing per tablespoon to 120 and more per tablespoon. Assuming you’re going the already made route.)
  • 1/4 cup walnut pieces
  • 2 tablespoons dried cherries (adds the perfect tartness to the mix)
  • 1/4 pound fresh cherries pitted (because they are in season and oh so delish)
  • 4 ounces goat cheese, slice
  • 1/4 pound cooked chicken breast strips

Directions:

Toss the salad greens, vinaigrette, walnut pieces and pitted and dried cherries into a large bowl. Divide salad onto plates.  Place slice of goal cheese and a few strips of chicken breast on top!

Looks beautiful, yes?  And tastes delish!!! A 5 YUM Summer Salad.
