From the Our Lady of Weight Loss kitchens here follows a Tomato Relish recipe that is a super duper pow complement to grilled seafood, chicken, fruits or veggies! Quite honestly, it’s so good, I’ve been known to eat the entire batch before it hits the table!
SUCCULENT SIDES: TOMATO RELISH
1 pound ripe tomatoes, finely chopped (no need to remove the seeds)
2/3 cup finely chopped red onion
1/4 cup chopped fresh Italian parsley
4 tablespoons extra virgin olive oil
4 tablespoons lemon juice, freshly squeezed
1 tablespoon fig balsamic vinegar
3 Serrano chile peppers*, seeded and finely chopped
salt n’ pepper to taste
Combine all ingredients in a medium size pool. Season w. salt n’ pepper. Cover and chill until chilled, overnight even better!
