Mâche?  What’s Mâche???    Mâche is a European salad green that grows in small, rosette-shaped bunches. It has dark green leaves on short stems, and it enjoys a distinct sweet taste.  Or rather you will, when you whip up this salad.

Shaved Zucchini and Mâche Salad with Lemon and Parmesan (from: Healthy Eating During Pregnancy – one of the best cookbooks I’ve come across – pregnant or not! I absolutely adore it.  5 YUM book.)

“Zucchini takes on a whole new – and perhaps surprisingly tasty – personality when served raw, shaved ito paper-thin ribbons and drizzled with lemon juice and olive oil.  Plus, it’s a good source of vitamin C and dietary fiber.

Serves 4 / under 200 calories per serving!

Ingredients:

3 medium zucchini, peeled
1/4 pound Parmesan, plus more for sprinkling
2 cups baby Mâche
2 tablespoons extra virgin olive oil
2 teaspoons lemon juice
salt and pepper to taste
1 tablespoon minced parsley

Instructions:

Using a vegetable peeler, shave the zucchini lengthwise into long ribbons.
Then shave the Parmesan into long ribbons.
Transfer both to a serving bowl and add the Mâche.

In a small bowl, whisk together the olive oil and lemon juice and pour it over the vegetables.

Season with salt and pepper, toss lightly, sprinkle with Parmesan and parsley, and serve.

Spread the word … NOT the icing!
