Dysfunctional Chef Friday – Roasted Orange Salmon

Today, I am serving up an extraordinarily healthy and delish dinner dish.

ROASTED ORANGE SALMON with GARLICKY GREENS

Not only are the salmon fillets drenched in a sugar-free orange marinade, this dish provides metabolism-boosting good fats. Served with a side of garlicky greens and quinoa, and you’ve got a 5 Yum Delish dinner that’s sure to impress.

Here’s what you’ll need – a.k.a. the …

… INGREDIENTS
ORANGE SALMON
1 tablespoon freshly grated orange zest
2 teaspoons freshly grated ginger
1/2 cup fresh squeezed orange juice (yes, from real oranges, not from a cardboard box!)
1/2 cup low-sodium tamari
4 – 6-oz. salmon fillets *

* When buying salmon, always opt for wild-caught Alaskan varieties.

INGREDIENTS
GARLICKY GREENS
1 tablespoon virgin olive oil
8 cloves garlic, minced
2 – 10-oz. packages fresh spinach
1/2 lemon – juiced

INSTRUCTIONS
ORANGE SALMON
In a zip-lock-top bag, combine orange zest, orange juice, tamari sauce.
Add salmon to bag.  Seal the bag.  Jiggle it around, making sure salmon is covered.
Keep refrigerated for 30 mins.

In the meantime … Preheat oven to 450 degrees.
When 30 mins have passed, remove fillets from bag and discard marinade.
Place fillets skin side down on a shallow roasting pan.
Roast salmon for 13 minutes (more or less), until the fish flakes easily!

INSTRUCTIONS
GARLICKY GREENS
In a large pan, heat oil over medium-high heat.  Add minced garlic, brown a bit.
Then when softened, toss in spinach a bunch at a time.
As it cooks down, add more … until it’s wilted.  Then mix lemon juice throughout.

If you want to make it pretty, put a 1/2 cup of quinoa (cooked, of course – I didn’t have to say that, did I?) on the plate, salmon on top of that, spinach atop the salmon.
