I thought, “wouldn’t it be fun to whip up a breakfast, fit for a Queen or a Princess … in honor of the Royal Wedding?”  In an effort to limit the amount of sugar in my diet, I scoured the earth (all my recipes and the Internet), mixing, tweaking, re-working until I came up with a healthy version of a bread pudding, which is oh so perfect for this Royal Wedding weekend!

Enjoy!!!

Ingredients:
1 cup milk (fat-free, 1% or 2%???  your call)
1 egg
2 egg whites
1/4 cup agave
1/2 teaspoon vanilla extract
8 slices of cinnamon-raisin bread, cut into cubes  (read the label – some breads have tons of sugar in them; some have enriched flour, which means that the nutrition was  removed from the flour and then ‘processed’ back in — whenever possible opt for foods that have not been processed!)

Instructions:
Preheat the oven to 350 degrees.  Spray a shallow baking pan with nonstick spray!
Combine eggs, whip together.  Add milk, agave and vanilla to eggs, and whip it some more.
Stir in the bread-cubes, giving them a few minutes to soak in the mixture!
Then … pour into baking dish.
Drizzle a tiny bit more of the agave on top of the pudding.
Bake, uncovered, until slightly puffed or golden; or until a knife inserted in the center comes out clean.  Depending on your oven, I’d say between 20 to 30 minutes.
Let stand for 15 minutes before serving!!
