When shopping at Sunflower Market, I picked up their free monthly magazine, which is chock a block with health tips, recipes and more – and this recipe popped out at me for a few reasons. It’s delicious, healthy, easy to whip up, it weighs in at only 330 calories per serving! AND it’s a slow cooker recipe! (guess what I got for the holidays!) … Just its name gets me to salivating?!

Serves 6: Several dried fruits add vitamins, fiber and zing to this vegetarian Moroccan stew. Serve with whole-wheat couscous or polenta and lightly braised greens.
Ingredients:
1/2 cup chopped dried apricots
1/4 cup raisins
1/4 cup chopped dried plums
1/2 cup chopped dried Turkish figs
2 15-ounce cans garbanzo beans, rinsed and drained
1 medium yellow onion, sliced
3 medium carrots, chopped small
1/2 cup whole raw almonds
1 teaspoon ground turmeric
1 teaspoon ground ginger
1/4 teaspoon ground cumin
1/8 teaspoon ground white pepper
1 teaspoon ground cinnamon
1-2 tablespoons unsalted butter
1 1/2 cups low-sodium vegetable broth
Instructions:
Place all ingredients in 4-quart slow cooker and stir in mix. Cover and cook on high for 2 hours on low for 4-6 hours. Season with salt and pepper, and serve.
Per Serving: 330 cal., 29% fat cal, 11g fat, 2g sat fat, 5 mg chol, 10 g protein, 53g carb, 1 1gfiber 261 mg sodium
