Today is … Eat Your Vegetables Day (to die for recipe included)

Today, June 17th, is yet another ‘bizarre’ yet wonderful holiday! “Eat Your Vegetables Day” falls smack dab in the middle of National Fresh Fruit and Vegetables Month! A timely reminder and opportunity to add healthy portions of fruits and veggies to your healthy living plan!
Please feel free to not only include veggies with your meals, but snack on them all day and into the night! And while you are munching on, chowing down on carrot sticks, mushroom caps and jicama (very exotic) veggie, you can feel the vitamins and minerals rushing through your body, giving you a healthy kick in the tush!
Here is one of my favorite salad recipes. It’s not only overflowing with veggies, but fruits, too! OMG!!!! LOVE IT!!!!
Arugula and Strawberry Salad
Ingredients:
1/3 cup chopped walnuts
4 cups baby arugula, or torn arugula leaves
2 cups sliced strawberries (or more if you like, nobody ever got fat on strawberries)
1 ounce Blue Cheese, crumbled into small pieces
2 tablespoons FIG balsamic vinegar (my favorite of all balsamic vinegars)
1 tablespoon extra-virgin olive oil
salt and pepper to taste
Instructions:
Toast walnuts in a small dry skillet over medium-low heat, stirring frequently, until lightly browned and aromatic.
Take in a deep breath and enjoy the aroma.
Transfer to a salad bowl. Let it cool for a few minutes and then add arugula, strawberries, cheese, salt n’ pepper. Sprinkle vinegar and oil over the salad and toss gently.
TIP: Sometimes, I heat the balsamic fig vinegar until it gets thick, like syrup! Wowzer!

    I love this! Eat Your Vegetables Day! Years ago I hardly ate vegetables. Now I call brocolli “the new chocolate!” It’s amazing how your tastes and cravings can change.

    Yeah…Janice,if only we can adopt Adam and Eve’s food plan al the time,i can call my fod and vegetable diet as Genesis diet,lol.we have much better vegetable because of the different dressings available,
    hmm,it should give us more veggy appetites…that recipe is ver ,very strawberry appealling to me,i love strawberries Janice,wanna make one ,try it and enjoy.My daddy must be very happy to know if i will transform all my meals to plain veggies and fruits,its been his dream Janice to see me become Eve,his name is adam,lol.

    I love the idea of “Eat Your Vegetables Day”! I have grown up in the country where we raised our own vegies, and they were so much more full of flavor and vitamins, plus minerals because you could let them ripen all the way on the plant, and they were so fresh. I still grow some of my vegies in my city yard, and love to go to the fresh markets that we have where venders bring in fresh grown vegies and fruits. The vegies and fruits, plus our good complex carbs are the best things for us to eat a lot of. People would be so much more healthy and not as overweight if we ate more of our vegies!
