This recipe is really easy, delicious, and healthy.  Try it!
Dr. Norris J. Chumley’s Mediterranean Fish
1 small fish (whole, but scaled)
juice of two lemons
1 tablespoon olive oil
fresh herbs: tarragon is nice, so is oregano, or dill
Remove the head from the fish, as well as the entrails (slice a cut through the bottom of the fish and scoop them out).  Leave the fish whole.  Wash it with cold water.
If grilling outside on a grill or in a broiler, wrap the fish, herbs, oil and juice from one lemon in aluminum foil.  Or, you can use a frying pan on low heat, covered.
Bake, broil or sauté for about 25-30 minutes, or until the internal temperature of the fish has reach a minimum of 145 degrees (as recommended by the USDA).
Serve hot on a warm platter, and add the juice from the other lemon as you eat.
This dish goes well with rice and sautéed or steamed vegetables, such as carrots, broccoli or summer squash.
