What’s for dinner? Sometimes it’s a challenge to find recipes that are both good tasting and good for you. Here is one way of adding zing to slow cooker chicken.
Chicken Taco Filling
1 package dry taco seasoning mix
1 cup chicken broth
1 pound skinless, boneless chicken breasts
Mix chicken broth and seasoning in a bowl.
Place the chicken in the slow cooker and pour the chicken broth mixture over it.
Cover and cook on low for 6 to 8 hours.
Shred the chicken and serve with a medium/low rice variety like Basmati, whole wheat tacos shells, or in a taco salad.

Taco Seasoning Mix
1 Tbsp. Chili Powder
1/4 tsp. Garlic Powder
1/4 tsp. Onion Powder
1/4 tsp. Crushed Red Pepper Flakes
1 1/2 tsp. Ground Cumin
1 tsp. Himalayan Pink Salt
1 tsp. Black Pepper
This will make just about the same amount of the packaged taco seasoning mix, but much cheaper and probably healthier!
