On a chilly fall morning, a nice hot casserole will be filling and satisfying for the whole family.  Here’s one that is easy and delicious as well as low glycemic.

Breakfast Casserole

1 cup  milk

6  eggs

3/4 cup shredded cheddar cheese

2 slices 100% whole wheat bread (stone ground), cubed

3/4 teaspoon salt

1/8 teaspoon pepper

1/4 cup mushrooms

chopped 1/4 cup onion

Directions

Whisk together milk and eggs. Add remaining ingredients and pour into an 8×8 pan that has been coated with nonstick cooking spray. Bake at 350°F. for 30 minutes.
