My favorite Passover desert is a flourless chocolate cake (which is made with lots of ground almonds, dark chocolate, sugar and other good things). I was interested to learn recently that this desert was invented by Jewish bakers in Italy long ago.
I was wondering if anyone had any other really great deserts for Passover.
Man cannot live by matzo balls, fried chicken and Southern Fried Matzo alone.

That is a great breakfast dish or side dish at lunch or dinner. It is crispy on the outside and moist on the inside with a salty flavor. Its really pretty simple to make if you know how.

You could try the book "Fabulous & Flourless" by Mary Mauksch. It's not a Passover cookbook per se, and some of the recipes call for non-Passover ingredients, such as peanuts (which are not eaten on Passover-at least by Ashkenazim). Many of the items can be made as written with Passover ingredients or by simply substituting Passover ingredients for those recipes that call for non-Passover ingredients.
Hope this is helpful
