Black Bottom Cups

An easy way to a sweet weekend

INGREDIENTS:

  • 1 package (8 ounces) cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 1 package (6 ounces) semi-sweet chocolate chips
  • 1-1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla
TO PREPARE:

1.  Beat together cream cheese, egg, sugar, and salt.  Stir in chocolate chips.  Set aside.
2.  In large bowl, sift together flour, sugar, cocoa, baking soda, and salt.  Add water, oil, vinegar, and vanilla.  Beat well.
3.  Fill muffin cups 1/3 full with chocolate batter.  Top with one heaping teaspoon cream cheese mixture.  Bake.

Temperature: 350 degrees
Baking Time: 30 to 35 minutes

YIELD: 24 cupcakes
