Sweet and Meaty Acorn Squash
Squash is the reason for the season. Crack open an acorn squash and load it up. Best way to get started is by tossing the whole squash in the microwave for just enough time (2-3 minutes max) to make it soft enough to cut in half. Warning - too much time and KABOOM! You'll think it's 4th of July. Clean out the center, add salt, pepper, and cinnamon. Bake for about 30-40 minutes till soft through and through. Plop some cooked and crumbled seasoned ground beef or italian sausage on top, and add a little more cinnamon. The combo is divine plain or you can top it with a tomato sauce.
