Veggie Chili with Homemade Hot Tortilla Chips
Throw any 'ole vegetables into your chili. That's right - empty your produce bin, chop up the leftovers, add a can of tomatoes, can 'o beans, a pinch of chili powder, salt and pepper. Cook it on a slow low heat and you've got a one-of-a-kind veggie chili. Keep up the creativity by turning a package of corn tortillas into delicious hot crispy tortilla chips. Quarter the tortilla chips and toss them into a pan of hot oil, (just enough oil to cover a single layer). They'll turn golden in mere seconds. Drain on paper towels, add salt and serve side by side with the chili.
